MANTELLASSI : Purovino technology

The Mantellassi Farms has the imminent objective of producing the first Morellino di Scansano without added sulphites thanks to the Purovino® technology, currently in trial stage for the 2016/2017 production in the Mantellassi cellars.

Purovino replaces the use of sulphur dioxide, a wine preservative that has several contraindications, with ozone which with a process of hyper-oxygenation blocks the oxidation of the wine ensuring excellent preservation of the sensory properties.

Purovino® is a scientific-technological method used for the production of wines without added sulphites, with particular attention to environmental sustainability and the wholesomeness of the end product.
